Thick Stew Soup with Oatmeal and Vegetables Recipe
Healthy and delicious, thick as a stew, soup with vegetables and oat flakes. It is prepared in 15 minutes and really helps out when you need to cook something quick and healthy.
Cut onion, carrot, pepper into cubes, finely chop garlic.
Lightly defrost frozen Brussels sprouts and cut into quarters.
In a saucepan, heat the oil and lightly simmer the onion, carrot, pepper and garlic (about 5-7 minutes), add the Brussels sprouts.
Pour in a light vegetable (chicken) broth or just water, add oat flakes and salt. The amount of broth depends on the desired thickness of the soup.
Cook for 7-10 minutes over medium heat. The soup is ready!
When serving, you can add half / quarter of an egg to saturate. But this is not necessary.
