Instructions
  1. Product list.
  2. First, peel the zucchini if it’s big, like mine. If it is small, skip this step. Cut the zucchini in half lengthwise and remove the core. We won’t need it anymore. If the zucchini is large, like mine, cook for 2 minutes (no more) in boiling salted water. If they are small, skip this step. Salt the zucchini on the cut side and set aside.
  3. Fry the seeds and nuts in a dry pan until Golden and fragrant. Then grind them in a blender, but not too much. Or chop it with a knife, like me.
  4. Dry the zucchini with a paper towel so that they are not wet. Fry them in a small amount of olive oil on one side only, cut down until Golden (it didn’t fit in my pan, so I immediately fried them in a baking dish).
  5. Separately fry the finely chopped onion and garlic over high heat. Onions should darken and slightly bitter. Now mix the filling: combine nuts, seeds, fried onions and garlic, adjika, honey, lemon juice, sesame and cream or cottage cheese. Add a pinch of salt and mix well. Try. If desired, add more salt, honey (if you want sweeter) or adjika (if you want sharper).
  6. If the taste suits you, stuff the zucchini and send it to the oven, preheated to 200 degrees for 20 minutes.
