Cut the eggplants into circles and fry them in vegetable oil. Put in a single layer on a plate.
The next layer is bell pepper and onion, fried until transparent. I fry these two vegetables together.
Then tomatoes, cut into circles and fry. Carefully transfer them to a plate with the third layer, squeeze out the garlic on them and grease them with mayonnaise if desired.
Top with grated cheese and put in the microwave for 1.5-2 minutes for the cheese to melt.
