You will need cookie cutters with sharp edges and a small coffee spoon (or a special one, like mine).
Use a cookie cutter to shape the cucumber.
Take these flowers.
Carefully remove the core with a coffee spoon, it is important not to damage the bottom.
Put the finished cucumber mold on a paper towel to absorb excess moisture.
Prepare the filling: mix mascarpone or Philadelphia with horseradish, sour cream. Add salt and pepper, you can add herbs, but I only had dry green onions.
Fill the cucumbers with the filling using a pastry syringe. You can decorate with caviar, small slices of red fish or just greens.
