  1. Mash the liver sausage, mix with butter and mayonnaise (I have Provencal mayonnaise with lemon juice). Finely chop the onion, pepper and cucumber.
  2. Squeeze garlic into the sausage mass, add spices, chopped vegetables, mix.
  3. Cut the crusts from the slices of bread and roll them out with a rolling pin.
  4. Lubricate the filling, roll into rolls.
  5. Wrap in plastic wrap and refrigerate for 3 hours (or overnight). Cut the finished rolls into slices.
