Preheat the oven to 170C.
Divide the dough into 3 parts.
Each part is rolled out on a floured surface into a circle with a diameter of 20-21 cm (the thickness of the dough is somewhere 3-4 mm). Cut into 8 sectors, make holes using cocktail tubes and pieces with which to cut out the core of apples (I don’t know what it’s called), or in other devices that you have at home.
Lubricate the cookies with a culinary brush with a small amount of protein, but not necessarily (I tried this and that, so I didn’t write in the ingredients)
Transfer the cookies to a baking sheet lined with parchment paper and bake for 20 minutes.
