Mix the milk with agar-agar, let it swell for 15 minutes. Then boil the milk and cook, stirring, over low heat for 2 minutes, until the agar-agar spreads.
Remove the pan from the heat, allow the milk to cool slightly and enter the black bitter chocolate, broken into pieces.
Pour in the sweet soy sauce. Here it will be most welcome, giving the tart bitter chocolate a weak sweet and salty note. Stir the chocolate mass until it acquires a uniform color and consistency.
* If you cook on gelatin instead of agar, then it should be introduced after the chocolate melts in hot milk.
