Cookies “Sand Squares with Jam” Recipe
Very easy to prepare cookies! Who calls them Viennese cookies, someone knows this recipe under the name grated pie… there are many names, as well as a variety of fillings for this cake! The filling can be jam, jam, and mashed berries… The result is the same, it turns out very simple and delicious!

  1. Melt the butter to a liquid state and let it cool down a little.
  2. Beat the eggs, sugar, vanilla sugar and salt with a mixer until the sugar crystals dissolve.
  3. Add the melted butter to the egg mixture and beat with a mixer.
  4. Add the sifted flour (in parts) and baking powder to the butter-egg mixture. Flour may need a little less or more.
  5. Knead the dough. Wrap about 1/3 of the dough in plastic wrap and put it in the freezer for 15-20 minutes.
  6. Sprinkle the baking sheet with flour. Place most of the dough on a baking sheet (35* 25 cm)
  7. Spread thick jam, jam-puree or jam-jam on top of the dough (I have plum jam).
  8. On top, grate the dough from the freezer on a coarse grater. Bake in a preheated 180 – 200g oven for 20-30 minutes.
  9. Cool the finished cake completely and cut into squares or rectangles.
