Young zucchini (diameter approx. 2 cm.) cut into slices with a thickness of approx. 1 mm. with a knife or grater.
Put in a bowl, sprinkle with salt, mix and leave for 40 minutes.
Drain the resulting juice.
Pour the flour, grated Parmesan, and ground pepper into a bowl with the zucchini.
Add egg.
Mix thoroughly.
Heat the vegetable oil in a frying pan.
With the help of two spoons, put the pancakes.
Fry until Golden brown.
Blot excess oil with paper towels.
