  1. Agar-agar, if time permits, I soak for several hours in a small amount of water, more often at night. I think it dissolves faster in boiling liquid. Pour sugar into the milk and put it on the fire. When the milk is heated, add the agar and bring the milk to a boil. Cook, stirring, for a few minutes, until the agar-agar completely dissolves. This is the difference between agar-agar and gelatin, which in no case can be boiled.
  2. While the milk is heating up and the agar is cooking, divide the cookie halves. Put one half, greased with cream, into silicone molds with the inscription down.
  3. Put the second half, without cream, in a bag and grind into crumbs with a rolling pin.
  4. Remove the milk from the heat and leave to cool at room temperature. Then whisk with a whisk. The milk will immediately foam, an air cap will appear. You can use a mixer instead of a whisk.
  5. Pour in the cookie crumbs and mix. Jelly agar-agar begins to set already at room temperature, so do not miss this moment.
  6. Pour into molds and put in the cold. The jelly will harden in 5 minutes. I got 6 molds with a volume of 70 ml and one wine glass, in which I put cookies on top. Here, by the way, is another spectacular way to serve this dessert.
