Heat the pan well and lightly oil it. If you want to get a pancake with a lot of holes and a pattern, lubricate the mold quite a bit each time (for pancakes with honey, I did that). If you prefer a more ruddy and dense pancake for the filling, then do not grease the pan at all (except for the 1st time). In my case, these are pancakes with caviar.
