Heat the pan well and lightly oil it. If you want to get a more hole-filled pancake and with a pattern, grease the pan just a little each time (for pancakes with honey, I did so). If you prefer a more ruddy and dense pancake for stuffing, then do not grease the pan at all (except for the 1st time). In my case, these are pancakes with caviar.
