Plum Cake “Squares” Recipe
I came back with a plum pie. Since the plum season is over, you can use frozen plums or, for example, apricots and peaches from compotes.

  1. The size of my baking dish is 20×30 cm. Wash the plums, cut in half, remove the bones. I have huge plums, I had to cut them into quarters so that the specified amount of plums could stand.
  2. Prepare the cottage cheese filling. Mix cottage cheese without grains with sugar, vanilla sugar and egg.
  3. Add half a package of vanilla pudding mixture, adding a couple of tablespoons of milk to make a homogeneous, plastic mass.
  4. For the dough, divide the eggs into yolks and whites. Whisk the whites with a pinch of salt to dense peaks, add sugar and whisk a little more.
  5. Add egg yolks and odorless sunflower oil to the whites one at a time. Sift the flour with baking powder and cocoa. Stir, if the dough turns out very thick, add one or two tablespoons of milk.
  6. Grease the mold with oil or cover with baking paper. Spread the dough with the spatulas soaked in water. Put the cottage cheese in a cooking bag and use a round nozzle to make a double grid around the perimeter of the pie and squares for draining. Arrange the plums in cut squares. Squeeze the remaining cream out of the plums in the form of cheese balls.
  7. Bake the pie in a preheated 180 degree oven for 20 minutes. Ready to check with a match. Cool the finished cake a little in the mold, and then remove it from the mold.
  8. Cut the pie into squares and pour the tea.
