Instructions
  1. Wash the currant, dry it, clean it from the stem (I do it with a fork). If you don’t have a ground poppy, just grind the poppy in a coffee grinder.
  2. Remove the zest from half a lemon.
  3. Separate the yolks from the whites. Whisk the whites into a tight foam with half the sugar.
  4. Whisk the yolks with the second half of the sugar and vanilla sugar. Add lemon zest and whisk, gradually adding sunflower oil.
  5. Add the beaten egg whites to the yolk mass. Stir lightly.
  6. Add flour, poppy seeds and currants. Gently mix with a spatula.
  7. Grease the baking dish with butter, sprinkle with flour and pour the dough onto a baking sheet. You can bake in a mold with a diameter of 25 cm, I baked in a round cake mold.
  8. Put the pie in a preheated oven and bake at 160 degrees for about 45-50 minutes. Readiness, as always, we check with a match. Cool the finished cake completely and remove it from the mold.
  9. Sprinkle the cake with powdered sugar and decorate with brushes of red currant and mint leaves.
