I love simple and quick recipes. Pork tenderloin medallions are one of them. Just two main ingredients! Cook for no more than 30 minutes. And by adding mango salsa hot sauce to this dish, you will get almost a restaurant dish.
Prepare everything for the preparation of this recipe.
Wash the pork tenderloin, dry it, remove excess film and tendons.
Cut the tenderloin across the fibers 5-6 cm thick.
Wrap a strip of bacon.
Tie with cooking thread or twine to preserve the shape of the medallions.
Mix the pepper and salt mixture.
Dip each medallion with the upper and lower parts into the resulting mixture.
Fry the medallions in a frying pan greased with olive (vegetable) oil for 2 minutes on both sides.
Bake the medallions in the oven at 200 °C for 10 minutes.
Let the finished medallions stand for 5 minutes, cut into 2 parts or serve whole.
