Baked vegetables are an ideal option for a delicious and healthy side dish or an independent snack. Vegetables cooked in a sleeve in the oven fully retain their juiciness and when adding seasonings, they are maximally saturated with their flavors and taste. With this method of cooking, the sliced pieces remain "whole", acquire the desired softness, light blush and a pleasant taste. For a festive presentation, a bright vegetable side dish can be supplemented with any meat dish, in this recipe these are Turkey medallions. The meat is cooked quickly, the main thing is not to over-dry it, so the medallions are baked in the oven along with the vegetables in the sleeve.

- 1 kg Vegetables potatoes, pumpkin, carrots, root celery
- 600 gram Turkey (fillet) medallions 12 PCs
- 4 tablespoons olive oil
- 2 teaspoons Soy sauce
- 1 teaspoon Honey
- 3 teaspoons Garlic powder
- 1 teaspoon Salt
- 3 teaspoons Paprika sweet
- 1 teaspoon Turmeric
- Rosemary to taste
- A mixture of spices to taste

- Medallions (d= 6-7 cm) - can be prepared from ready-made steaks, or a large Turkey breast. Mix the marinade for the medallions:put the honey in a small bowl, add the soy sauce, stir well, then add the spices (garlic 1 tsp+paprika 1 tsp+turmeric 0.5 tsp), stir in the olive oil. The mixture should be homogeneous (slightly thickened).
- Place the prepared vegetables in a baking sleeve, add spices (ground garlic 2 tsp+ground paprika 2 tsp+turmeric 0.5 tsp+dry rosemary 1.5 tsp+salt 0.5 tsp), and 2 tbsp olive oil. Fix the sleeve and shake it slightly so that the vegetables are mixed with each other and with spices. Put the sleeve on a baking sheet, set aside (do not put it in the oven yet). Turn on the oven. Marinated Turkey medallions fry in a preheated grill pan for 2-3 minutes on both sides, lightly salt the medallions (0.5 tsp), and pepper. Open the sleeve with vegetables on one side, spread the roasted Turkey medallions on top of the vegetables, and secure the sleeve again. Do not pierce the sleeve (with this method of cooking, the Turkey meat will remain juicy and soft, and the vegetables will cook much faster). Bake the dish at t 200C, 30-35 minutes.
