Instructions
Beat the eggs with sugar. Separately, whisk the cream and vanilla sugar, add to the egg mixture.
Grate the cooled potatoes on a medium grater and mix with the poppy seeds. Add to the egg-cream mixture. Mix it.
Add flour and baking powder. Mix it. Pour the dough into a greased butter mold (24 cm). Bake in a preheated oven at 160 degrees for 45 minutes.
Cool the finished cake on the grill. Cut the cooled cake into 2 cakes. Brush the bottom cake with apricot jam. Cover with a second cake.
In a separate bowl, mix powdered sugar, orange juice and water. Apply the fudge to the top of the cake.
Decorate as desired.
