  1. Boil the potatoes in salted water, cool slightly, peel and cut lengthwise into 4-6 pieces.
  2. At the same time, you can prepare salad dressing: peel the onion, finely chop, pour in the broth, bring to a boil and cook for 5 minutes. Then add mustard, vinegar, salt to taste and more black pepper. Beat the puree with a blender. Add vegetable oil and mix. Immerse the prepared potatoes in the hot dressing and leave for an hour. Periodically, during this time, gently stir the potatoes.
  3. Wash the arugula, dry it, cut it, add it to the cooled potatoes.
  4. Cut the peeled radish into thin slices, add to the salad.
  5. Apples are peeled, cut into 4 parts, then into thin plates. Add to the salad.
  6. Mix all the vegetables carefully, add salt and pepper to taste, add if necessary.
