We will need puff yeast dough, you can buy ready-made, I do the following recipe (step-by-step photos are not as it was made in advance) :
– In warm milk, dilute the yeast and sugar, remove to a warm place for about 10 minutes (until rising).
– Sift the flour into a separate bowl, add salt, water, pour our sourdough and knead the dough. when the dough becomes elastic, add 50 g of butter, fold it in an envelope and put it in the refrigerator for 30 minutes. We take out, roll out the layer, add the rest of the oil, put it in an envelope and remove it for another 30-40 minutes. While the dough is in the refrigerator, pour boiling water in a separate bowl with poppy seeds and raisins.
At the end of the time, take out the dough and let it lie at room temperature for 10-15 minutes.
