Wash the Breasts. dry and season with salt and pepper. On the skin, make incisions, not cutting through to the end.
Heat the pan well. put the Breasts skin down and fry quickly until Golden on both sides.
Then put the Breasts in a baking dish and bake in a preheated oven to 190C for 8-10 minutes. Wash the salad and raspberries and dry them.
For dressing, mix oil, honey, lemon juice, season with salt and pepper.
Cut the duck breast into slices. Put the pieces of duck, lettuce and raspberries on a plate. Garnish with a sprig of Basil, thyme and green onions. Pour the dressing on top of the salad.
