Soup with Dumplings and Pumpkin “Autumn” Recipe
I suggest you try a warming, hearty soup with pumpkin, vegetables and dumplings. A great option for cold rainy days, while you will need a minimum of cooking time.

  1. Wash the vegetables and peel them.
  2. Carrot and pumpkin cut into small cubes, pepper and onion – thin feathers.
  3. In a saucepan with a thick bottom, heat the vegetable oil. Fry the chopped vegetables for about 2-3 minutes, stirring constantly.
  4. Cut the tomatoes in a convenient way for you, chop the garlic finely. Add to the vegetables, stir and fry for a couple of minutes.
  5. Add salt, a pinch of nutmeg and any of your favorite spices + bay leaf. Put the dumplings in one layer (I have frozen). Pour the dumplings with boiling water 2 cm higher, after boiling, reduce the heat and cook under a closed lid until the dumplings are ready.
  6. Sprinkle with herbs, pepper and serve.
