  1. In a bowl, beat the softened butter with sugar with a mixer.
  2. Add the vanilla, vegetable oil, lemon zest and beat again.
  3. Sift the flour and baking soda separately.
  4. Add the flour from the oil mixture.
  5. Knead the dough. The dough should gather into a ball when pressed.
  6. Form small balls and roll them in coconut chips.
  7. Place the balls on a baking sheet covered with baking paper and greased with vegetable oil.
  8. Pour boiling water over the almonds and leave for 5-7 minutes, then drain the water and peel the almonds. Spread the peeled almonds on top of the balls. I got 27 pieces. Cook in the oven, preheated to 180 degrees, 10-15 minutes. The Swedes have a whole cult of gatherings with a cup of coffee and sweets – called Fika [ffikaka]: to have coffee means coffee as an occasion for social activity. It combines a coffee break, a light snack between meals – in the company of colleagues, friends, family or in solitude, as you want. This is a legitimate reason to take a break from work and spend time with pleasure. Previously, 7 pies with different fillings were served for the traditional “fika”. Modern Swedes have cinnamon buns, cakes, cookies of various varieties and even sandwiches at the peak of popularity. It is not surprising, the population of the country is among the leaders in the consumption of coffee and sweets in the world.
