  1. Cut the onion into half rings, grate the carrots on a coarse grater or finely chop. Fry the onion in olive oil for a minute and add the carrots to it. Fry for a few minutes.
  2. Peel the sweet pepper, cut into thin strips.
  3. Add to the onions and carrots. Fry for a few minutes, stirring.
  4. Add chopped tomatoes, salt, pepper, sweet paprika. If you use fresh tomatoes, then after washing them with boiling water, remove the skin. If desired, you can add other favorite spices.
  5. Cover with a lid and, stirring occasionally, simmer for about 15 minutes. In the process, try spices, depending on the acid of tomatoes, add the necessary amount of sugar (I have 1 tablespoon left).
  6. At the end, add the chopped garlic.
  7. Remove from the heat and add the herbs, in my case it’s parsley. Cover with a lid and leave to infuse for 10 minutes.
  8. At this time, fry 2 eggs separately. This can be done by simply driving the eggs into the pepper a few minutes before cooking. Salt and pepper. Serve in portions with bread.
