Onions cut into half rings, carrots three on a coarse grater or finely cut. In olive oil, fry the onion for a minute and add the carrots to it. Fry for a few minutes.
Sweet pepper clean, cut into thin strips.
Add to onions and carrots. Fry for a few minutes, stirring.
Add chopped tomatoes, salt, pepper, sweet paprika. If using fresh tomatoes, after rinsing them with boiling water, remove the skins. Optionally, you can add other favorite spices.
Cover with a lid and, from time to time stirring, simmer for about 15 minutes. In the process, try on spices, depending on the acid of tomatoes, add the necessary amount of sugar (I left 1 tablespoon).
At the end, add the crushed garlic.
Remove from heat and add the greens, in my case it is parsley. Cover with a lid and leave for 10 minutes to infuse.
