Thai Fried Noodles with Seafood Recipe

  1. Prepare the products. Defrost a sea cocktail (octopuses. squid, small shrimp). Remove the chitin cover from large shrimps (2 per serving), cut along the back and remove the intestinal vein. Fry the peanuts in a dry frying pan. Instead of rice noodles, I will use funchesa, which is a departure from the classic recipe.
  2. Chop the green onions. Chop the garlic and hot red pepper.
  3. Soak the noodles according to the instructions on the package. Pour in warm water and leave for 6 minutes. Then rinse in cold water and discard on a sieve.
  4. Pour 2 tablespoons of peanut butter into the wok and heat it over an intense heat. Add the chopped garlic and hot pepper. Fry for a minute.
  5. Add the sea reptiles and fry for 4-5 minutes. Transfer to a platter.
  6. While the shrimp with octopus and squid are being fried, prepare a sauce from fish sauce, tamarind paste and sugar. If there is no tamarind paste, replace it with rice vinegar.
  7. Pour the remaining amount of peanut butter into the pan and fry the onion with garlic and ginger paste. Push aside the greens. on the free edge of the pan, beat two eggs, fry, mixing them with a wooden spatula.
  8. Add the prepared noodles, without reducing the heat, mix the noodles with herbs and eggs.
  9. Pour in the finished sauce and mix thoroughly so that it covers and impregnates each noodle.
  10. Add the shrimp, soy sprouts, green onions and stir the dish to completely warm it up. Adjust the taste by adding soy sauce. When serving, sprinkle the dish with fried peanuts.
