Cellophane Noodles with Fried Vegetables and Broth Recipe
Cellophane Noodles - is a very interesting "glass" noodles made of beans. It does not have such a pronounced taste, so it requires a bright accompaniment. I've prepare to give the noodles with vegetables baked in teriyaki sauce and rich broth. It turned out incredibly tasty, hearty and not hard. Great variety on lean days.
The first thing you need to put to cook the broth. Onions clean and cut in half, celery cut into two halves, carrots thick slides, greens. In a saucepan pour water, put the prepared vegetables and put on a big fire. When the water boils, salt, add pepper, reduce heat to a light drilling and leave the broth to boil for about 30 minutes.
Prepare the vegetables for baking. Eggplant cut into cubes, put on a paper towel and add salt. Squash cut into slices, onions and peppers half rings or feathers.
Wipe the protruding moisture on the eggplant, put all the vegetables in the form or on a baking sheet. Sprinkle with olive oil and teriyaki sauce. Put in the oven at 180 C for 15 minutes, then increase to 220, turn on the grill and keep another 5 minutes in the oven to a blush.

Drain the water from cellophane noodles, spread it in a deep dish. From above, put the vegetables and pour all the hot broth. The dish needs to stand for a few minutes to noodle to prepare from the hot broth. Sprinkle vegetables with black pepper to taste, sprinkle with freshly chopped herbs and add lime slices to the dish for freshness. Serve with soy sauce which you can pour the noodles.
