Vegetable Soup with Unusual Meatballs Recipe
This light soup will either really like it, or you will never want it again. But those who love corn and beans in any form will like it. In addition, it does not contain fried vegetables, there is not much fat and heavy in it. But there are a lot of chicken meatballs with fresh vegetables, corn, beans and lots of greens.

  1. Wash the chicken fillet, dry it and cut into pieces. Peel the onion and cut it into cubes. We’ll put it through a meat grinder. Peel the bell pepper from the seeds and cut it into small cubes. Peel the carrots and grate them on a fine grater. Add the vegetables to the minced meat and mix. Add the egg, boiled rice, salt and mix.
  2. Pour water into a saucepan and put it on the fire, bring to a boil. Drain the liquid from the corn and add it to a pot of water.
  3. Drain the beans, too, and add it to the pan with corn. Bring to a boil and add salt to taste.
  4. Form meatballs from minced meat and put them in a saucepan with soup. Don’t make the meatballs very large. Cook over low heat, after boiling, under a lid, for 20 minutes, until the meatballs are ready. Turn off the heat and let it stand for another 5-10 minutes.
  5. Pour the soup on plates and add a lot of finely chopped dill and green onions. The more, the better.
