  2. Fry the minced meat in a frying pan in 1 tablespoon of vegetable oil. Rub the meat, breaking up large lumps. Fry for about 5 minutes.
  3. Press the minced meat against the walls of the pan and add finely chopped onions and grated carrots to the center. Lightly fry the vegetables in the center of the dish.
  4. Then mix the vegetables with the meat.
  5. Peel the tomato and turn it into a puree (tomato paste can be replaced with water). The chopped tomato is poured into a frying pan with minced meat.
  6. Stir and cook for 10 minutes.
  7. 10 minutes after the introduction of tomatoes, add a pinch of salt and sugar, stir and continue to simmer vegetables with minced meat for another 10-15 minutes with the lid closed. In the process, add another 100 ml of water and let the products simmer a little more. Taste the sauce, if necessary, add salt, sugar, pepper.
  8. While the vegetables with minced meat are cooking in a frying pan, prepare the zucchini. Wash, dry, peel. Cut the zucchini lengthwise into two parts, remove the seeds from each with a spoon, a vegetable peeler or a knife — for whom it is more convenient, cut off the tips. At this stage, the weight of the zucchini is determined. Remove the zucchini pulp layer by layer.
  9. Put the sliced zucchini to the minced meat in a frying pan, mix them thoroughly with the sauce for even distribution. We have only 5-7 minutes left to simmer the zucchini over low heat.
  10. Cover the pan and remove the pan from the heat — stewed zucchini with carrots and onions should infuse in meat sauce for 15 minutes and absorb all the taste qualities.
  11. The dish is ready, if desired, when serving, you can sprinkle with herbs.
