There are only 3 main ingredients available, and it will take you 15 minutes of your time to cook delicious, tender Adyghe cheese at home. It can be eaten on its own or used to prepare various salads and snacks. I recommend it!
Pour milk and yogurt into a saucepan, put it to heat over medium heat. Do not boil.
While the milk and kefir are heating up, beat the eggs with salt for 5 minutes at high speed.
Pour the egg mixture into the warmed milk in a thin stream, stirring constantly. Cook over medium heat.
When the mixture boils, cook over medium heat for another 2 minutes, stirring constantly.
Cover the colander with gauze folded in several layers and carefully lay out the cottage cheese, press down well with a spoon, forming a shape of cottage cheese. Leave to stand on the table for 1 hour to get the serum.
After an hour, carefully transfer the cottage cheese into a bowl, cover it and send it to the refrigerator for 10 hours
