This recipe will appeal to all lovers and non-lovers of pearl barley, which is undeservedly bypassed. But it’s so healthy, it has so many vitamins and nutrients that we need. A delicious and satisfying dish, easy to prepare, suitable for lunch and dinner.

  1. Prepare all the necessary products. If the pearl barley has not previously been kept in water for 2-3 hours, then suggest cooking it this way. First, rinse the grits. Then fill with cold water and put on fire. After the contents of the pan boil for 1-2 minutes, drain the hot water and pour cold water again, add a little salt and cook until tender.
  2. Separate the meat from the bones and cut into small pieces. Place the chicken pieces in a preheated frying pan with vegetable oil. Add salt, add your favorite spices and, stirring occasionally, simmer until all the juice evaporates.
  3. While the meat is cooking, finely chop the onion, grate the carrots on a coarse grater, and cut the tomatoes into small cubes. In a frying pan, on which the meat is already beginning to brown quite a bit, first we send the onion, fry for a few minutes, then the carrots – also fry for a couple of minutes. Last of all, put the tomatoes and garlic, simmer until the slices of tomatoes become a little soft.
  4. Add hot (required! add water, cover the pan with a lid and simmer for 20 minutes. Then add sour cream and boil for 2-3 minutes. Add finely chopped herbs (any that you like – parsley, dill, cilantro) and simmer for 2-3 minutes. Then add the finished pearl barley, pre-washed with hot water, to the pan with the chicken-sour cream-vegetable mixture. Cook for a couple of minutes, cover the dishes with a lid and leave to languish for 5 minutes.
