In a preheated deep frying pan, pour the olive oil and add the butter. Melt.
Put the beef pieces in the pan and fry over medium heat for 15 minutes.
Cut the carrots into bars and send them to the meat. Stir and fry for 5-7 minutes.
Onion cut into half rings,
large slices of red onion and leek rings. Send to the pan with the other ingredients. Stir well. Leave for 3 minutes.
Add coarsely chopped garlic cloves. Fry for 1-2 minutes.
Cut the mushrooms into quarters and put them in a frying pan. Stir. Fry for 7 minutes. Add tomato paste and water. Stir well. Bring to boil. Turn down the heat, cover and simmer for 40 minutes.
After forty minutes, add the nutmeg, black pepper and salt to taste. Cut off a small part of a well-washed head of garlic and send it to the pan. Simmer for 10 minutes under the lid.
Add the chopped parsley and simmer for another 15 minutes. Done.
