Separate the whites from the yolks (put the whites in the refrigerator for now)
Mix the yolks with the sugar.
Whisk until white.
Sift the flour with baking powder.
Gradually, stirring constantly, add the flour sifted with baking powder to the beaten egg-sugar yolks.
Beat the cooled whites with a pinch of salt to peaks.
And gently mix the proteins into the dough with a spatula.
Mix well, trying to make it airy.
Cut the apples into 2 parts, peel and seeds, grease the mold with oil (or cover with parchment). Put the apples flat side down on the bottom. Sprinkle them with cinnamon.
Pour the dough over the apples.
Bake for 25-30 minutes in the oven, preheated to 200C. It is advisable not to open the oven during baking. Check readiness with a wooden stick, it should remain dry.
