  1. Cut the chicken into cubes, season with salt and pepper. In a large frying pan, heat the melted butter and fry the chicken until lightly golden brown for about 4 minutes. Add oregano and rosemary. Try not to overcook so that the chicken retains its juiciness.
  2. Then transfer the chicken to a plate.
  3. Heat vegetable oil in a frying pan and fry the chopped mushrooms over medium heat. Fry, stirring occasionally, until golden brown. Do not salt the mushrooms, they will remain juicy.
  4. Finely chop the onion and garlic and add them to the mushrooms. Fry for a few minutes.
  5. Add the red wine to the mushrooms in the pan. Boil for a short time until the amount of liquid decreases, there should be a little left.
  6. Add the meat to the sauce and simmer for a couple of minutes.
  7. Remove the bay leaf. Remove the pan from the heat. Add salt and pepper to taste. If you want more sauce, you need to increase the amount of cream.
  8. Transfer the finished dish to a plate and add the greens.
