We separate the skin from the Shin and lower it with a “stocking” to the lower end of the bone.
We make a longitudinal incision on the cleaned Shin and cut the meat.
Cut the peeled fillet into pieces and put it in the bowl of a blender.
Grated peeled raw potatoes on a medium grater.
Add the peeled and diced onion and garlic cloves, egg white, chicken seasoning, chopped herbs, ground pepper and salt. Mix and grind with a blender or meat grinder.
With a wet spoon, take a portion of minced meat, dip it in the egg yolk shaken with a fork and roll it in semolina (or small semolina). Shape the cutlets.
We put the cutlets in a food container and take them to a picnic. Before cooking, grease the cutlets with ketchup for the grill and cook on the grill.
These cutlets can be cooked at home in a grill pan or in an electric grill.
