  1. It is assumed that the lemon curd is ready. The recipe can be found on the website by request “Lemon Curd”. I will briefly tell you how I cook lemon curd. Take 2 medium-sized lemons, remove the zest from them and squeeze out the juice. Add the zest to a bowl with 200 grams of sugar and mix thoroughly. Add 150 g of soft butter and rub. Add 2 eggs, a teaspoon of starch and lemon juice. Stir and put in a water bath. Stirring, cook until thickened, remove from heat, rub through a sieve to get rid of the zest, cool to a warm state, add another 50 g of butter and stir it until completely dissolved. Stored in the refrigerator in a jar with a tight lid.
  2. Turn on the oven so that it warms up to 180 degrees Celsius. Put cottage cheese, sugar, vanilla sugar, egg, milk and warm melted butter in a bowl.
  3. Beat with a mixer until smooth.
  4. Add the flour sifted with baking powder to the dough.
  5. Knead a homogeneous, slightly sticky dough. It is impossible to knead the dough for a long time, only 1-2 minutes.
  6. Sprinkle the work surface with flour, spread the dough and roll out to a thickness of no more than 3-4 mm. For convenience, you can roll out pieces of dough.
  7. Cut out oval shaped cookies. I’ve been racking my brain all day how to cut oval blanks. I found a plastic container from a big surprise kinder egg, divided it into two halves. The section of the plastic half is a circle, but if you slightly squeeze it from the sides, you can cut out suitable ovals. Cut out the ovals and place them on a baking sheet lined with parchment.
  8. Cut a small circle right on the baking sheet from half of the workpiece
  9. Place the baking sheet in a well-heated oven and bake for 10 minutes (!) Remove from the oven. Separately, lay out the entire workpiece and the workpiece with holes.
  10. Blanks with holes are abundantly covered with powdered sugar.
  11. Lubricate the entire workpiece with lemon curd.
  12. Sprinkle the workpiece with powdered sugar, and put another half teaspoon of chicken into the hole. Form all cookies this way. We put it on a plate. That’s how beautiful it all turned out!
