Cookies with Marshmallows “Snow Spinning” Recipe
Very tasty crunchy cookies, with a layer of marshmallows, and not store-bought, but homemade!!! A great treat on a winter evening with a cup of tea or coffee.

  1. Prepare the dough: Cut the cold butter into cubes and whisk in a blender with almonds until crumbs, add the yolks and cold water and continue to beat, add flour and knead the dough, roll into a ball and put it in the refrigerator for at least an hour (I had a day).
  2. Prepare Marshmallows: Boil the syrup from sugar and water (until a soft ball forms), soak the gelatin in water so that it swells for 30 minutes. When the gelatin swells, add it to the syrup and whisk everything at medium speed of the mixer until a thick foam forms, add the proteins and continue whipping so that the mass becomes thick and viscous, whisk for at least 10 minutes Molds, preferably silicone, sprinkle with powder and spread them with marshmallow mass, and put them to dry for 2-5 hours in a cooled oven, well, or in a dry place, marshmallows turn out tender, melting in the mouth.
  3. Let’s move on to the liver: The dough is rolled into a layer. Cut out the mugs from the glass, put them on a baking sheet greased with butter, or you can put them on parchment. Bake cookies at a temperature of 200 * for about 15-20 minutes. Cut the marshmallows in half. When the cookies cool down, take one, put it on top of the marshmallows and cover with another cookie, and – voila – the cookies are ready. Enjoy your tea!!!!!
