Prepare Marshmallows:
Boil the syrup from sugar and water (until a soft ball forms), soak the gelatin in water so that it swells for 30 minutes.
When the gelatin swells, add it to the syrup and whisk everything at medium speed of the mixer until a thick foam forms, add the proteins and continue whipping so that the mass becomes thick and viscous, whisk for at least 10 minutes
Molds, preferably silicone, sprinkle with powder and spread them with marshmallow mass, and put them to dry for 2-5 hours in a cooled oven, well, or in a dry place, marshmallows turn out tender, melting in the mouth.
