Cottage Cheese Cake without Baking "Snow- Covered Berries" Recipe
I present to your attention a light, lush dessert with an airy and delicate texture. The cake is prepared quite simply, which is not a little important on the eve of the holiday rush. And its taste will give you real pleasure.
Mix the waffles and nuts, add the melted butter, and mix well. Split form (diameter 20 cm) lay parchment and distribute the waffle base. Put it in the refrigerator.
Boil 300 ml of water , dissolve the jelly in it , mix well, let it cool down a little.
Add 2 tablespoons of sugar and 50 ml of cream to the curd.
Beat with an immersion blender until smooth. If the curd is too dry, you can add a couple of spoons of diluted jelly to better beat.

Next, whisk the cream to steady peaks.
Add cream to the cottage cheese with jelly, gently mix with a spatula.
On top of the waffle base, distribute a little of the resulting mass, spread out the berries, I have blueberries.
Then add a little more curd and spread out the other berries, I have cranberries. And so on. Then put the form in the refrigerator.
Put the coconut shavings, sugar and butter in a saucepan. Put on fire. Heat until until the butter is completely melted. Allow to cool. Distribute the shavings on the slightly frozen cake, then put them in the refrigerator until completely solidified.
Carefully remove the cake from the mold , decorate as desired and can be served to the table.
