  1. Combine flour, water, salt and vegetable oil in a bowl. Prepare a fairly thick, but not tight dough. The dough is not sticky.
  2. Collect the dough into a ball, wrap it in a film and leave for 30-40 minutes to rest.
  3. Chop the onion and smoked bacon.
  4. Roll out the dough into a thin tortilla, similar to pizza. I roll it out on baking paper, don’t grease it with anything.
  5. Grease the tortilla with sour cream. Sour cream should be fat. Of course, it all depends on the manufacturer and the quality of manufacture, but 15 % sour cream can curdle during heating and you will have a full pan of liquid. And it is not needed here at all! I just ruined a pie once.
  6. Spread the sliced bacon and onion on top of the sour cream. Sprinkle with black pepper. Flammkuchen is baked like a pizza, so you need to preheat the oven to 230 degrees. Place in a well-heated oven for 20-25 minutes. Focus on your technique.
  7. 5 minutes before cooking, remove the baking sheet and place the mozzarella slices on top. I took one large balloon. Put the pan back in the oven for another 5 minutes until the mozzarella melts.
  8. Cut the pie into pieces and serve to everyone. Bon Appetit!
