Hummus “Buffalo Wings” Recipe
Classic hummus has long crossed the borders of the Middle East, where it was invented, and spread around the world. When hummus appeared in America, Americans loved it. But at the same time, like many other dishes, Americans have enriched the recipe of hummus, bringing new flavors to it. Despite the name, this version does not contain chicken meat. Here the classic hummus is complemented with barbecue sauce and hot tabasco sauce. They give hummus the taste of barbecue wings.

  1. Soak the chickpeas overnight in cold water, then drain, pour in fresh water in a ratio of 1:3 and cook until soft for about 1-1.5 hours. Strain the broth (it will still be useful). Fill the chickpeas with cold water and, rubbing with your hands, peel off the husk, drain it with water.
  2. Add ready-made barbecue sauce to the chickpeas (I have homemade barbecue sauce), chopped garlic, olive oil, tahini paste, lemon juice, smoked paprika and a little tabasco.
  3. Whisk everything with a blender into a homogeneous mass. Add salt to taste. Adjust the density by adding chickpea broth to your liking.
  4. The taste of this hummus is very rich, with smoked notes. It’s sharp! There can be anything, but for me it’s just with a piece of toasted toast!
