Hummus is an ancient Oriental cold appetizer made of chickpeas and sesame paste, spices and olive oil. Chickpeas are a rich source of plant protein, as well as various minerals, vitamins, and fiber. I suggest you prepare a version of this snack with broccoli, which will not only give hummus colors, but also enrich it with a lot of useful substances. Hummus with broccoli will be a great snack on your new year's table!
Soak chickpeas overnight. Drain the water in which the chickpeas were soaked and add a new one, so that the chickpeas cover 5 cm. Cook for 1-1. 5 hours. Do not drain the remaining water. Chill the chickpeas.
Cut the broccoli and cook for 10 minutes. Cool.
In the bowl of the combine, load the chickpeas (leave a little for decoration), broccoli, tahini, oil, lemon juice, salt and spices and whisk, gradually adding the cooled broth to get the desired consistency ( it took me about 100 ml).
The food processor did a great job of making hummus.
To serve, I grilled a baguette.
If you add more chickpea broth, then hummus can be used, for example, as a sauce for pasta.
