Mashed Soup with Zucchini and Apple Recipe
Another recipe for dietary vegetable soup with apple and cream. I added a few cubes of Poshekhon cheese and 1 tsp of olive oil to the soup. Tender, delicious, healthy soup. Ideal for dieters and for those who watch their figure and diet.

  1. Pour 500 ml of water into a saucepan, bring to a boil and put the vegetables: onions; carrots; zucchini; potatoes, add an apple. Cut the vegetables and apple into arbitrary pieces. Cook everything until ready. This is about 13-15 minutes. Next, we put the greens: dill and parsley, garlic, also cut arbitrarily, so that they can then be easily crushed with an immersion blender. Add salt to taste. Cook for a couple more minutes. Remove from the heat and make a puree. I used an immersion blender.
  2. Put it back on the fire, bring to a boil, pour in cream or milk. Stir, add salt, bring to a boil and remove from heat. Let it stand for a while.
  3. Serve with cubes of poshekhonsky cheese.
  4. If desired, pour 1 tsp olive oil per serving.
  5. It’s amazing! You can put any cheese you like.
