Chop the onion and mushrooms, grate the carrots on a large grater.
In a saucepan, heat the vegetable oil.
Add the onion and carrot and fry for 2-3 minutes. until soft.
Add the mushrooms and fry under the lid for 5-7 minutes.
Season with salt and pepper.
Add the tomato paste, mix and warm for 30 seconds.
