Heat the milk to a slightly warm state. Pour about 1/3 of it into a bowl. Add 1 tsp sugar, a pinch of salt and yeast. Gently mix and leave in a warm place.
When the “cap” appeared on the sponge, proceed to the preparation of the dough.
Whisk eggs with sugar.
Pour in 2/3 of the milk and the starter culture.
Gradually adding flour, mix until the dough becomes homogeneous (not thick). Cover the bowl with a napkin and leave in a warm place for 1 hour.
The dough came up.
Add the zest from 1 orange, vegetable oil and cinnamon to the dough.
Stir until smooth, without lumps.
Preheat the mold (lightly walk over it with a brush dipped in vegetable oil), pour out the dough (the diameter of the mold is 19 cm, the dough was poured about 2.5-3 tbsp.).
As soon as the edges of the pancake are browned, turn it over and fry on the second side. Then transfer the pancake to a plate and brush with butter.
