  1. Wash cranberries or raisins in hot water. Pour in one tablespoon of rum or cognac (optional). Chop the nuts coarsely.
  2. Beat eggs with sugar, vanilla sugar and a pinch of salt until a light viscous mass forms.
  3. Add the sifted flour, mix gently with a spatula.
  4. Peel 4-5 medium-sized apples, remove the core and grate them on a coarse grater directly into a 30 × 40 cm mold covered with baking paper. Put cranberries or raisins and nuts on top. Sprinkle with cinnamon if desired.
  5. Pour the dough over the apples and smooth the surface of the apples.
  6. Place the baking sheet in a hot oven and bake for 20-25 minutes. Turn the finished cake onto a slightly damp towel with the paper up. Moisten your hands a couple of times and swipe over the paper, carefully so as not to get burned. Then carefully remove the paper.
  7. Using a towel, roll up the roll and place it on a platter.
  8. Cool the cake completely, sprinkle with powdered sugar, garnish with mint leaves and you can serve. The roll is prepared very quickly, the taste is excellent. This soft and lush roll will win your heart.
