Instructions
  1. Pour wheat and corn flour into the blender bowl, add salt and sugar, turn on for a few seconds to mix the ingredients.
  2. Add cold butter, cut into small cubes, turn on the blender again and mix the ingredients until fine crumbs are obtained.
  3. Then pour 2 tablespoons of ice water into a bowl and grind everything for a few seconds until the crumbs turn into rather large pieces of dough, which form a lump when compressed.
  4. If the dough crumbles, you can add 2 more tablespoons of ice water, 1 spoon at a time.
  5. Pour the resulting dough into a plastic bag, form a disk from it and put it in the refrigerator for 1 hour.
  6. Wash the plums, dry them, then cut them into 4 parts. Put the plum slices in a bowl, add the starch and mix well.
  7. In another bowl, mix the sugar with the cinnamon.
  8. Put the dough on baking paper, lightly sprinkle it with flour and roll it into a circle with a diameter of 35 cm (I got less).
  9. Transfer the dough paper to a baking tray. Put the filling on the dough, not reaching the edge of 5 cm, sprinkle the plums evenly with a mixture of sugar and cinnamon.
  10. Wrap the edges of the dough in a circle (straight with paper, then carefully unscrew it), then lubricate them with yolk, whipped with 1 tsp of water (I did not lubricate). Bake in an oven preheated to 180 ° C for 35-45 minutes, until the dough is browned and the filling begins to bubble.
  11. Serve the pie warm or cold. Enjoy your tea!
