Sift the flour. Prepare the sourdough. Mix dry yeast with 2 tablespoons of flour and 1 tablespoon of sugar. Add warm milk (100 ml) and mix with a whisk. Put the bowl of sourdough in a warm place until the foam cap appears.
Prepare the dough. Melt the butter in the microwave and add the milk (200 ml), mix. Chicken eggs 1.5 PCs (1 yolk left for greasing pies) beat with a whisk with salt and 1 tbsp sugar. Pour the egg mixture into the oil, add the frothy sourdough and mix until smooth.
Add flour to the liquid mixture in small portions.
Spread the dough on a dusty cutting Board.
Knead a smooth dough that does not stick to your hands.
Lubricate a clean bowl with sunflower oil and put the dough. Close the bowl with a film and put it in a warm place to lift the dough 2.5 times.
Prepare the filling. Remove the seeds and skin from the plums. Two plums are left for decoration with the skin. Cut the peeled plum into slices and cover with sugar (3 tablespoons or to taste), mix. You can add ground cinnamon. Put a saucepan with a plum on a low heat and constantly stirring bring the mass to a boil and dissolve the sugar. Keep the saucepan on the stove for 1 minute and remove from the heat.
Knead the finished dough and let it rise for 20 minutes (under the film).
Forming pies-buns. Divide the dough into 12 parts and roll it into buns.
Roll out each bun. A little grease with plum filling.
Roll each tortilla into a roll.
Fold the rolls.
Cover the baking dish with paper and grease with vegetable oil. Put the blanks and cover with a light towel or transparent bag. Leave in a warm place for 20 minutes or to increase the rolls by 2 times.
Use scissors to make a cut on the blanks (in the middle). Put a small cold piece of butter, cooked jam and slices of unpeeled plum in the cut. Sprinkle sugar on top. Send the baking sheet with the blanks to the preheated 180 C oven for 30-35 minutes.
Then grease the pies with beaten egg yolk and put them in the oven for 2-3 minutes until Golden brown.
Ready-made pies are sprinkled with water and left to cool under a towel.
