Avocado salad is always popular in my house at any time of the year. And even more so with shrimp. add some other vegetables and herbs, and you will have a quick and delicious salad ready on the table.
Cut the avocado in half lengthwise and remove the pit. carefully. to avoid damaging the skin, remove the pulp.
Finely chop the avocado pulp, boiled carrots, eggs, cucumber, pepper and lettuce leaves. Peel the celery from coarse fibers and slice it. Leave the most beautiful shrimp to decorate the salad, chop the rest finely.
Prepare the dressing for our salad. to do this, mix soy sauce, mayonnaise and a pinch of a mixture of Provencal herbs in a cup. Stir until smooth and season the salad. Add salt to taste.
Fill the empty avocado halves with salad and serve. Separately, you can serve ketchup, the remaining salad dressing and mayonnaise.
