Snack of Beans and Baked Peppers Recipe
A Bulgarian colleague shared the recipe for such a snack with me, saying that she eats it in hot weather. A very tasty snack or salad, but for me it is a self-sufficient hearty dish.

  1. The recipe is given without cooking beans. I immediately boil it in large quantities, and then freeze it in portions.
  2. Bake the pepper at a temperature of 200 degrees for about 45 minutes. Peel, remove the seeds and cut into strips.
  3. Finely chop the garlic and parsley. Grate the tomatoes on a coarse grater. Mix with pepper and beans. Add vinegar and oil to taste, also add salt to taste.
  4. Put the snack in the cold for a couple of hours or overnight, during which time the beans and vegetables will marinate. When serving, sprinkle generously with grated cheese. Enjoy your meal!
