Mix kefir with sour cream. Add salt, sugar and soda. The mixture will foam. Pour in the melted butter.
Gradually pour in the flour, kneading the dough. It took more flour for my dough than indicated in the recipe. The dough should be soft and fluffy. Thanks to the oil, it almost does not stick to your hands.
Divide the dough into pieces. Take one piece and shape the tortilla according to the size of the mold. The dough turns out to be soft and obedient, so it can be easily made with your hands.
For the filling, grate both types of cheese on a coarse grater. Add soft butter, sour cream and, if necessary, salt (I did not salt). Mix the filling well, rubbing the mixture with a fork.
Form the pellets in a way that is convenient for you. Place the tortilla in a dry frying pan, cover with a lid and keep on medium heat for 2-3 minutes.
Turn over and fry for another 2 minutes. on the other hand, it is already without a lid.
