  1. In 50g. warm milk dissolve the yeast, add 1st. l. sugar and 1 tbsp. flour. Stir, cover and leave to approach in a warm place.
  2. In a separate bowl, mix the remaining flour, salt, 40g of sugar, milk, egg yolks and yeast. Stir. Add the melted, warm butter and knead the dough. Cover the dough and leave it to rise for an hour.
  3. When the dough comes up, roll it out on a Board in a rectangle, 4 mm thick. Cover with plastic wrap and refrigerate overnight. (together with the Board)
  4. After 12-14 hours, put the dough out of the refrigerator on a cutting Board and prepare the filling.
  5. Peel the apples and cut them into small pieces. Add the juice of one lemon. Add the remaining sugar and cinnamon. Cut the biscuit into pieces and add to the apples and mix lightly. Leave for 10 minutes.
  6. Put the filling on the dough and roll up the roll. Pinch the edges well.
  7. Transfer the roll to baking paper and cut the roll into two beams, not cutting to the end.
  8. And now the most difficult part! It is necessary to twist the two beams of the roll between them, carefully, trying to “lose” the pieces of Apple filling as little as possible.
  9. Put the roll together with baking paper in the form. Don’t look for a bigger shape, on the contrary! Let the shape be small, so that it slightly presses the sides of the roll. Cover the roll and leave it to come up for at least an hour!
  10. Bake the roll in a preheated oven at 180g for 45 minutes. Cool the roll in the form and only then cool on the grill.
